It will have a consistency similar to applesauce.  We can ship your sea moss gel fresh the same day it is made. When sea moss gel is raw, it is good unrefrigerated about a week. This is why you will need to (shake it well) and refrigerate it promptly upon receipt. Allow about a day for it to gel before using.
